Espresso Beverages: Step-by-Step

Double Shot 

1. Dispense 18-20 grams of coffee into a double-shot portafilter. 

2. Level the grinds as necessary and tamp using 30 pounds of pressure. 

3. Flip portafilter upside down to remove excess grinds. 

4. Insert portafilter into espresso machine and turn on water dispenser 

5. Dispense 2 ounces of brewed espresso. (approximately 32 - 40g of liquid by weight)

6. Serve immediately in appropriate glassware. 

*A single shot of espresso would use 7-9 grams of coffee to produce 1 ounces of espresso. All other parameters are the same. However, most coffee houses no longer use the single shot.* 

Americano 

The recipe for an Americano is hot water added to espresso shots. Be sure to ask if the customer would like room for cream in their Americano. 

Americano 8 oz 

1. In a preheated cup, immediately before preparing espresso, dispense 6 oz of hot water. If the customer would like room for cream, use 5 oz hot water. 

2. Top water with a splash of cool water (to help preserve crema of espresso)

3. Pull two shots of espresso. 

4. Pour the espresso on top of the hot water to preserve the crema of the espresso. 

*If the customer requests an Iced Americano, use cool water and add the ice to the beverage after the espresso is added.*

Black Eyed Susan

A Black Eyed Susan is an espresso-based recipe with brewed coffee to fill the cup. It is also commonly called a Red Eye or a Shot-in-the-Dark. 

12 oz

1. Prepare a double shot of espresso. 

2. Place the shots of espresso in a preheated cup, and fill with the coffee of the customer’s choice. 3. Serve immediately in appropriate glassware. 

16 oz

1. Prepare a double shot of espresso. 

2. Place the shots of espresso in a preheated cup, and fill with the coffee of the customer’s choice.

3. Serve immediately in appropriate glassware.

Espresso Drinks with Milk: Step-by-Step

Espresso Macchiato 

The recipe for an espresso macchiato is a shot espresso with a dollop of frothed milk on top. “Macchiato” literally means “marked” in Italian. 

Double Macchiato 

1. Prepare a double shot of espresso. 

2. Steam the smallest amount of milk possible to create micro-foam. 

3. Dollop two spoonfuls of foamed milk onto the espresso shot. 

4. Serve immediately in appropriate glassware.

Cappuccino 

The cappuccino is a strong espresso based recipe. The milk is slightly more foamed than for a latte, but the real difference is in the proportions of the drink. A cappuccino is ⅓ espresso, ⅓ steamed milk, and ⅓ micro foam. 

Cappuccino 6 oz 

1. Pull a double shot of espresso. 

2. Simultaneously, steam 4 oz of milk. 

3. Place espresso shots in a preheated cup and add milk to fill a 6 oz cup. 

4. Serve immediately in appropriate glassware.

Latte 

A latte is a creamy, espresso based beverage. In this recipe, The milk is slightly thinner than for a cappuccino. 

12 oz Latte 

1. Prepare a double shot of espresso. 

2. Steam 8 oz of milk in a cold pitcher. 

3. Combine espresso and milk in a preheated cup. 

4. Serve immediately in appropriate glassware. 

16 oz Latte 

1. Prepare a double shot of espresso. 

2. Steam 10 oz of milk in a cold pitcher. 

3. Combine espresso and milk in a preheated cup. 

4. Serve immediately in appropriate glassware.

Flavored Latte 

12 oz 

1. Prepare a double shot of espresso. 

2. Steam 8 oz of milk in a cold pitcher. 

3. Combine espresso and 2 pumps of flavor in the cup and stir. 

4. Add milk to fill the cup. 

5. Serve immediately in appropriate glassware. 

16 oz

1. Prepare a double shot of espresso. 

2. Steam 10 oz of milk in a cold pitcher. 

3. Combine espresso and 2 pumps of flavor in the cup and stir. 

4. Add milk to fill the cup.

Mocha Latte

Mocha means “chocolate” in the language of espresso. It is simply a way of denoting a latte with chocolate added to it. 

12 oz Mocha Latte 

1. Prepare a double shot of espresso. 

2. Steam 8 oz of milk in a cold pitcher. 

3. Combine espresso and .5 oz of mocha in the cup and stir. 

4. Add milk to fill the cup. 

5. Serve immediately in appropriate glassware. 

 

16 oz Mocha Latte 

1. Prepare a double shot of espresso. 

2. Steam 10 oz of milk in a cold pitcher. 

3. Combine espresso and 1 oz of mocha in the cup and stir. 

4. Add milk to fill the cup. 

5. Serve immediately in appropriate glassware.

Café Breve 

A Café Breve is a latte that uses heavy cream or ½ and ½ instead of milk. If flavor is requested, flavor a Breve as you would a latte. 

12 oz Café Breve 

1. Prepare a double shot of espresso. 

2. Steam 8 oz of ½ and ½ in a cold pitcher. 

3. Combine espresso and ½ and ½ in a preheated cup. 

4. Serve immediately in appropriate glassware.

16 oz Café Breve 

1. Prepare a double shot of espresso. 

2. Steam 10 oz of ½ and ½ in a cold pitcher. 

3. Combine espresso and ½ and ½ in a preheated cup. 

4. Serve immediately in appropriate glassware.

Cortado 

A Cortado is a drink made with equal parts espresso and milk and is usually less than 6 oz. Café Campesino serves a 4 oz Cortado. Another common name for a Cortado is a Gibraltar. 

4 oz Cortado 

1. Prepare a double shot of espresso. 

2. Steam 2 oz of milk in a cold pitcher. 

3. Combine espresso and milk in a preheated cup. 

4. Serve immediately in appropriate glassware.

Macchiato Latte 

A Macchiato Latte (or Reverse Latte) is prepared exactly the same as a traditional latte except the espresso shots are added to the recipe at the end. 

12 oz Macchiato Latte 

1. Prepare a double shot of espresso. 

2. Steam 8 oz of milk in a cold pitcher. 

3. Combine milk and any desired flavor in preheated cup. 

4. Add the espresso shots to the top of the drink. 

5. Serve immediately in appropriate glassware. 

16 oz Macchiato Latte 

1. Prepare a double shot of espresso. 

2. Steam 10 oz of milk in a cold pitcher. 

3. Combine milk and any desired flavor in a preheated cup. 

4. Add the espresso shots to the top of the drink. 

5. Serve immediately in appropriate glassware.

Flat White 

The Flat White is a small, strong espresso drink. The American definition is basically the same as cappuccino. The recipe originates from Australia and New Zealand where a cappuccino typically has a very dry foam cap and people who wanted a strong but creamy drink needed to make a distinction between the two. 

6 oz Flat White 

1. Prepare a double shot of espresso. 

2. Steam 2 oz of milk in a cold pitcher. 

3. Combine espresso and milk in a preheated cup. 

4. Serve immediately in appropriate glassware.

Cold Drink Recipes

Iced Latte

An iced latte is a delicious cool treat for a hot day. **It is recommended that you test your to-go cups to see how well they withstand the heat of espresso added directly to the cup. Some may start to break down. 

12 oz Iced Latte 

1. Prepare a double shot of espresso. 

2. Add 6 oz milk and any desired flavor in a 12 oz cold cup. 

3. Add espresso to milk and stir. 

4. Add ice to fill the cup. 

5. Serve immediately to the customer. 

16 oz Iced Latte 

1. Prepare a double shot of espresso. 

2. Add 8 oz milk and any desired flavor in a 16 oz cold cup. 

3. Add espresso to milk and stir. 

4. Add ice to fill the cup. 

5. Serve immediately to the customer.

Frappe 

A Frappe is a frozen, blended coffee drink. Café Campesino prepares Frappes using Cold Brew coffee, a neutral frappe base, and ice. 

16 oz Frappe 

1. Place 4 oz Cold Brew in the blender carafe. 

2. Add any desired flavor. 

3. Fill to the 8 oz line on the carafe with filtered water. 

4. Add ½ cup of neutral frappe base. 

5. Fill blender carafe to the 16 oz line with ice.

6. Blend and serve immediately to the customer. 

*For a Mocha Frappe, use 2 oz Mocha by weight. For any other flavor, use 3 pumps of the desired syrup.*

Coffee Alternatives

Hot Chocolate

12 oz

1. Place 1 oz of mocha in a cup. 

2. Steam 10 oz of milk in a cold pitcher. 

3. Combine a small amount of milk with the mocha and stir.

4. Add milk to fill the cup. 

5. Serve immediately in appropriate glassware.

16 oz

1. Place 1 oz of mocha in a cup. 

2. Steam 12 oz of milk in a cold pitcher. 

3. Combine a small amount of milk with the mocha and stir. 4. Add milk to fill the cup. 

5. Serve immediately in appropriate glassware.

Peppermint Hot Chocolate 

12 oz

1. Place 1 oz of mocha and 1 pump Peppermint syrup in a cup. 2. Steam 10 oz of milk in a cold pitcher. 

3. Combine a small amount of milk with the mocha and syrup and stir. 4. Add milk to fill the cup. 

5. Serve immediately in appropriate glassware.

16 oz

1. Place 1 oz of mocha and 1 pump Peppermint syrup in a cup.

2. Steam 12 oz of milk in a cold pitcher. 

3. Combine a small amount of milk with the mocha and syrup and stir.

4. Add milk to fill the cup. 

5. Serve immediately in appropriate glassware.

Chai Latte

Chai is a black tea with cinnamon, cardamom, and other spices added to it. A Chai Latte is a drink made with a concentrated chai mixture and milk, steamed like a latte. 

12 oz  

  1. Combine in a cold steaming pitcher: 

  • 2 oz Chai Concentrate 
  • 8 oz milk 

2. Steam as if you were preparing milk for a latte. 

3. Pour mixture into the appropriate cup. 

4. Serve immediately to the customer. 

16 oz

  1. Combine in a cold steaming pitcher: 

  • 3 oz Chai Concentrate 
  • 9 oz milk 

2. Steam as if you were preparing milk for a latte. 

3. Pour mixture into the appropriate cup. 

4. Serve immediately to the customer. 

Chai Tea

A Chai tea uses water instead of milk to make a hot tea beverage that is slightly spiced.

12 oz

  1. Combine in a cold steaming pitcher: 

  • 2 oz chai concentrate
  • 8 oz water

2. Steam as if you were preparing milk for a latte.

3. Pour mixture into the appropriate cup.

4. Serve immediately to the customer.

16 oz

  1. Combine in a cold steaming pitcher: 

  • 3 oz Oregon Chai Original concentrate 
  • 9 oz water 

2. Steam as if you were preparing milk for a latte. 

3. Pour mixture into the appropriate cup. 

4. Serve immediately to the customer. 

Cold Coffee Alternatives

Iced Chai Latte

A 16 oz Iced Chai Latte uses the proportions of a 12 oz drink to account for the ice in the cup.

  1. Combine in a measuring cup: 

  • 2 oz Oregon Chai Original concentrate 
  • 8 oz milk 

2. Pour the mixture into the appropriate cup. 

3. Add ice to fill the cup. 

4. Serve immediately to the customer.

Iced Chai Tea

A 16 oz Iced Chai Tea uses the proportions of a 12 oz drink to account for the ice in the cup.
